Malai Kofta is a classic North Indian dish featuring crispy, melt-in-your-mouth paneer and potato dumplings in a creamy, flavorful gravy. It’s a perfect dish for special occasions or indulgent meals!


Ingredients:


For the Kofta (Dumplings)

  •  2 medium potatoes (boiled & mashed)
  •  ½ cup paneer (grated)
  •  2 tablespoons corn flour (or besan/gram flour)
  •  1 tablespoon cashews (chopped)
  •  1 tablespoon raisins
  •  ½ teaspoon salt
  •  ¼ teaspoon garam masala
  •  ¼ teaspoon red chili powder
  • Oil for frying

For the Gravy

  •  2 tablespoons oil or butter
  •  1 cup onions (chopped)
  •  2 teaspoons ginger-garlic paste
  •  3 medium tomatoes (pureed)
  •  10-12 cashews (soaked & blended)
  •  ½ teaspoon turmeric powder
  •  1 teaspoon cumin powder
  •  1 teaspoon coriander powder
  •  ½ teaspoon red chili powder
  •  ½ teaspoon garam masala
  • ½ cup fresh cream
  •  1 teaspoon kasuri methi (dried fenugreek leaves)
  •  Salt to taste
  •  1 cup water (adjust as needed)


Instructions:



Prepare the Kofta:


1. In a bowl, mix mashed potatoes, grated paneer, corn flour, cashews, raisins, salt, garam masala, and red chili powder.

2. Shape the mixture into small round balls.

3. Heat oil in a pan and deep-fry the koftas on medium heat until golden brown. Remove and place on a paper towel to drain excess oil.



Make the Gravy


4. Heat oil or butter in a pan. Add onions and sauté until golden brown.

5. Add ginger-garlic paste and sauté for a minute.

6. Stir in tomato puree and cook until oil separates.

7. Add cashew paste, turmeric, cumin, coriander, red chili powder, and salt. Cook for 2-3 minutes.

8. Pour in water, bring to a simmer, and let cook for 5 minutes.

9. Add garam masala, kasuri methi, and fresh cream. Mix well and turn off the heat.


Assemble the Dish:


10. Just before serving, place koftas in a serving dish and pour hot gravy over them.

11. Garnish with fresh cream and chopped coriander.


Serving Suggestions:

Enjoy Malai Kofta with naan, roti, or jeera rice for a restaurant-style meal at home!
